Tuna salad with crispy chickpeas


Ingredients

5 Tbsp Extra virgin olive oil , divided

15oz can chickpeas rinsed

patted dry

kosher salt

1 small shallot , finely chopped

2 tablespoon mayoneise

1 tablespoon Dijon mustard

1 tablespoon red wine vinegar

freshly ground black pepper

5 oz can water packed tuna drained

3 red or other enevine , halved crosswise leaves seperated

1/2 cupparsley leaves

2 tablespoon (heaping ) sliced pickled chillies

1/2 lemon

Method

Heat 3 tablespoons oil in a large skillet over medium heat . Cook chickpeas, tossing occasionally , until crisp and golden brown 6-8minutes . Season with salt and let cool.

Whish shallot , mayoneise, mustard and vinegar in a large bowl , season dressing with salt and pepper. mix in tuna breaking up with a fork . Add chickpeas, endive , parsley and pickled chillies . Finely grate zest from lemon overthen squeeze in juice . Pour in remaining 2 tbsp oil and toss to combine . Taste and season with more salt if needed .

Butter beans with kale stalks lemon chilli and garlic.


Ingredients

180gr kale , stalks through removed leaves finely sliced

3 tablespoon olive oil

2 garlic cloves finely sliced

one and one half teasepoon chilli flakes

1 lemon zested or juiced

400gr butter beans drained and rinsed

Method

Heat the olive oil in a large saucepan over low heat then cook the garlic chilli flakes , lemon zest and 1 teasepoon salt for 3 minutes . Stir in the butter beans and warm through for 5-8minutes stairing frequently .

Tip the beans out of a bowl leaving approximately1 tablespoon oil in the pan . Return to the pan to a medium heat them add the kale along with 50 ml boiling water from the kettle . Cook for 8to 10 minutes until wilted starting frequently .

Remove the kale from the pan and gently mix and serve warm.

Ingredients

12oz dried wheat noodles and salt

1/2 cup and creamy peanut butter

2 tablespoon unseasoned rice vinegar

4 tbsp pure maple syrup or honey

1 tsp soy sauce

1 small garlic cloves finely grated

freshly ground black pepper

4 small cucumber thinly sliced

2 scallions finely chopped

1/2 salted roasted peanuts coarsely chopped

raw sesame oil or chilli oil for serving

Method

Cook noodles in a large pot of boiling salted water until tender . Drain and rinse under cold running water. Set aside . Whisk peanut butter, vinegar, maple syrup, soy sauce garlic and 1/4 cup warm water in a large bowl until smooth . Dressing should be in a consistency of heavy cream . if too thick add a little more water as needed . Season with salt and pepper . If noodles are needed together rinse briefly to seperate drain well . Transfer to bowl with dressing ; toss to coat . Add cucumbers and scallions and season with salt and pepper . Divide noodles among bowls . Top with with peanuts and drizzle with oil.
