Satay chicken curry


Ingredients

1 tablespoon olive oil

1kg chiken tights filet trimmed roughly chopped

1 large onion cut in thin wedges

2 garlic cloves,crushed

1 tbsp malasian curry paste

250gr chunky peanut chicken

140gr chunky peanut butter

1 tbs fruit cutney

Coriander leaves to garish

Steamed rice to serve.

Method

Heat oil in a large non stick pan or wok , add chicken satay sauce., coconut milk, peanut butter & chutney & mix to combine .

Simmer uncovered for about 15 minutes & sauce has reduced & thickened .

Sprinkle with coriander & serve with rice .
