Pasta salad


Ingredients

240gr whole grain pasta

200gr mushrooms

1 red pepper

200Aubergines sliced

1 tablespoon fresh pesto

200gr cherry tomatoes halves

fresh spinach

Roasted pumpkin and sunflower seeds

Goat cheese shaving

Method

Boil pasta . drain and add the pesto , cherry tomatoes and mushrooms . Cook on low heat for a minute or two

Add the roasted vegetables fresh spinach and seeds . Serve immediately with goat cheese shavings on top
