Shaved fennel and radish salad


Ingredients

2 fennel bulbs about 1lb to 5lb in total

10oz radishes

2 tablespoon roughly chopped parsley

Dressing

4 tablespoon lemon juice

2 tablespoon olive oil

salt and pepper

Method

Slice the fennel and radishes as thinly as possible on a mandolin or with a knife , reserving the fennel frauds for garishes . toss together in a large salad bowl with the parsley .
