Ingredients
180gr kale , stalks through removed leaves finely sliced
3 tablespoon olive oil
2 garlic cloves finely sliced
one and one half teasepoon chilli flakes
1 lemon zested or juiced
400gr butter beans drained and rinsed
Method
Heat the olive oil in a large saucepan over low heat then cook the garlic chilli flakes , lemon zest and 1 teasepoon salt for 3 minutes . Stir in the butter beans and warm through for 5-8minutes stairing frequently .
Tip the beans out of a bowl leaving approximately1 tablespoon oil in the pan . Return to the pan to a medium heat them add the kale along with 50 ml boiling water from the kettle . Cook for 8to 10 minutes until wilted starting frequently .
Remove the kale from the pan and gently mix and serve warm.
